Hazard Analysis and Critical Control Points (HACCP) is a systematic preventive approach to food safety and pharmaceutical safety that addresses physical, chemical, and biological hazards as a means of prevention rather than finished product inspection. HACCP is used in the food industry to identify potential food safety hazards, so that key actions, known as Critical Control Points (CCP's) can be taken to reduce or eliminate the risk of the hazards being realized. The system is used at all stages of food production and preparation processes including packaging, distribution, etc.
HACCP-9000 is an international registration program that integrates HACCP, International Organization for Standardization (ISO 9000), and food hygiene practices into one comprehensive management system that guides the implementation of a solid food safety and quality for a food or beverage facility, or foodservice establishment anywhere in the world.
The ISO 9001:2000 standard , published by the International Organization for Standardization, is an international reference for quality management requirements and continuous improvement of business-to-business interactions. The ISO 9001:2000 standard provides a tried and tested framework for taking a systematic approach to managing an organization's processes so that it consistently turns out products and services that satisfy customer expectations. Some of the requirements in ISO 9001 include: a set of procedures that cover all key processes in the business, monitoring processes to ensure they are effective, keeping adequate records, checking output for defects, with appropriate and corrective action where necessary, regularly reviewing individual processes and the quality system itself for effectiveness, and facilitating continual improvement.
