Abiu

Abiu are round to oval-shaped fruit, with smooth, bright yellow skin. Their flesh is creamy-white in colour, with a gel-like texture and a sweet, caramel-like flavour. The flesh also contains large brown seeds, which should be removed before eating. Abiu are quite delicate in flavour, so are best enjoyed fresh by themselves – other flavours can overwhelm their subtle, sweet taste. They’re available between October and August.

To Buy

Abiu are quite fragile, so look for fruit with no blemishes or bruises on their skin. Their skin should be an even yellow colour, with no discoloured patches, although there may be a hint of green close to the stem-end

To Store

Take care not to squeeze abiu, as this will bruise their delicate flesh. They should be stored in the fridge for up to 1 week.

To Prepare

Cut fruit in half then scoop out the flesh, removing the seeds. Abiu will discolour when cut, so brush with a little lemon or lime juice then slice as required.
Quick ideas with ABIU

1. For a fresh dessert, scoop abiu flesh into a bowl then refrigerate until well chilled. Drizzle with a little lime juice and serve with frozen yoghurt or thick natural yoghurt.
2. For a sweet treat, remove seeds from abiu flesh then puree until smooth. Swirl through a little coconut cream then serve topped with toasted coconut flakes
