Bismark potatoes have creamy white skin and flesh. They are a floury variety, good for baking, roasting or making chips. Bismark potatoes are available all year round, and are a particularly good variety to choose when you want crispy skins.
1. For a fresh side dish, wash bismark potatoes then roll in garlic salt to coat. Roast until crisp and golden. Delicious served with fish and a tomato salsa or chutney
2. For a delicious breakfast or brunch, boil peeled bismark potatoes until just tender. Allow to cool then grate potatoes. Add 1 lightly beaten egg and season with salt and pepper. Form into small patties. Heat butter and olive oil in a frying pan until sizzling then add hash browns and cook until golden. Serve alongside eggs and bacon, or topped with sour cream and smoked salmon.
