Bison potatoes

Bison potatoes are round potatoes, with dark-red to purple skin. Their flesh is white. Bison are an all-purpose variety, good for boiling, baking or mashing. They’re available all year round.

Quick ideas with BISON POTATOES

1. For a fresh light meal, bake bison potatoes until skins are crisp and potatoes are tender. Cut off the tops and scoop out the potato. Combine with sliced shallots, diced cooked bacon and grated cheese then spoon back into potato skins. Top with a little sour cream then serve
2. For a winter side dish, cut bison potatoes in half horizontally. Score the flesh with quite deep horizontal lines then brush with melted butter and sprinkle with breadcrumbs and grated parmesan cheese. Bake until golden then serve with beef or chicken.
