Butter lettuce

Butter lettuce is also known as Boston lettuce. It has soft and delicate leaves, varying in colour from mid-green to brown or red tinged. It has a subtle, slightly sweet flavour, and is good in all kinds of salads. Mignonette is a variety of butter lettuce, with slightly more crinkly leaves. Its leaves are usually brownish-red, but can also be green. Its flavour is the same as butter lettuce. Both butter lettuce and mignonette are available all year round.

Quick ideas with BUTTER LETTUCE

1. For a fresh dinner idea for kids, cook small corn fritters then place onto butter lettuce leaves. Mix together a little sweet chilli sauce and lite mayonnaise and dollop over fritters then wrap up in lettuce leaves.
2. For a fresh salad, tear butter lettuce leaves into bite-sized pieces. Toss together with cherry tomatoes, sliced avocado and garlic croutons. Drizzle with olive oil then serve with fish.
