- For a tasty risotto, cut butternut pumpkin into cubes and toss in olive oil, salt and pepper. Place into a roasting dish together with rosemary sprigs and whole garlic cloves then roast until golden and tender. Stir through a cooked basic risotto, together with grated parmesan cheese, chopped parsley and cooked diced bacon.
- To make pumpkin soup, peel 750g butternut pumpkin and cut into small pieces. Peel and dice 1 brown onion. Place into a large saucepan together with 2 litres chicken stock and simmer until pumpkin pieces are soft. Puree until smooth then swirl through a little coconut milk
