Cherry tomatoes are small and round little gems, with a sweeter flavour then regular tomatoes. They’re perfect for salads or for taking along on picnics, and are also delicious when roasted gently until just collapsing. Cherry tomatoes are available all year round.
1. For a fresh dinner, arrange whole cherry tomatoes in a roasting dish with whole garlic cloves. Drizzle with olive oil and season with salt and pepper. Top with white fish fillets and sprinkle with a little lemon juice. Cover with foil and roast until fish is cooked through and tomatoes are tender. Serve with baby spinach leaves.
2. For a fresh appetiser, halve cherry tomatoes and arrange in baked tartlet cases with torn basil leaves. Crumble over goat’s cheese. Whisk together eggs, salt and pepper then pour into tartlet cases. Bake until just set.
