- For perfect roast potatoes, cut coliban potatoes into quarters. Boil for 10 minutes then drain, shaking to roughen up their surfaces. Spoon 4 tablespoons of olive oil over the base of a roasting pan then heat in oven for 5 minutes. Once oil is hot, add potatoes, shake to coat in oil, then roast until crisp and golden
