Cos lettuce is the variety made famous by the Caesar salad. Its long green leaves have quite thick white ribs running down their centre. Cos lettuce has quite a crisp, crunchy texture, with a slightly sweet flavour. Baby cos lettuce is also available – this variety is much smaller, with a more delicate flavour. Cos lettuce is available all year round.

- For a delicious traditional chicken Caesar salad, cut cos lettuce leaves into strips, crossways. Toss together with shredded cooked chicken, croutons, cooked diced bacon and quartered hard-boiled eggs. Drizzle with Caesar salad dressing and add anchovies, if desired, then sprinkle with grated parmesan cheese.
- For a fresh appetiser, separate the leaves from a baby cos lettuce. Mix together chopped cocktail prawns, mayonnaise, diced avocado, sliced shallots and a little Worcestershire sauce. Spoon a little mixture into each cos lettuce leaf then serve with drinks.
