Endive

Endive is also known as curly endive or frisee. It’s grass-green in colour, with frilly, serrated leaves. It has a relatively bitter flavour that pairs well with meat and other rich ingredients. Available all year round, endive has a crisp texture and strong flavour. Use it fresh in salads, or cook it as you would spinach.

To Buy

Look for crisp, brightly-coloured endive, that feels relatively heavy for its size.

To Store

Store in an airtight container or plastic bag in the crisper section of your fridge for 2 to 3 days.

To Prepare

Remove the core then wash leaves in cold water. Tear into pieces (cutting can bruise the leaves) then use as desired.
