Gai choy

Gai choy is an Asian cabbage that is generally pickled, braised or used in soups. Also known as mustard cabbage, it has a strong, bitter flavour that is reminiscent of mustard. It has quite thick, pale green stems, with broad, slightly crinkled green leaves. It’s available all year round.

Look for fresh-looking leaves, with no discoloured or soft patches.

To Store

gai choy in the crisper section of your fridge for 2 to 3 days

To Prepare

Remove the outer leaves then wash remaining leaves in cold water.
