Gai choy is an Asian cabbage that is generally pickled, braised or used in soups. Also known as mustard cabbage, it has a strong, bitter flavour that is reminiscent of mustard. It has quite thick, pale green stems, with broad, slightly crinkled green leaves. It’s available all year round.

Remove the outer leaves then wash remaining leaves in cold water.
