Hydroponic tomatoes are allowed to ripen fully on the vine, and are sold with their little green stalks still attached. Vine-ripened or truss tomatoes are the same, but are sold still attached to their portion of the vine. Hydroponic and vine-ripened tomatoes typically have a slightly sweeter flavour than regular tomatoes. They’re available all year round, in both red and yellow varieties. Use them in salads, sandwiches, pasta sauces and salsas.
