Oyster mushrooms are quite large mushrooms, with their finely fluted caps resembling fans or oyster shells. They are available in cream, beige or pink. Oyster mushrooms have a soft texture and a delicate, subtle flavour. They are most commonly used in Asian-style dishes, where they tend to absorb the flavours of the other ingredients they are cooked with. Oyster mushrooms are available all year round, and are often used in combination with other varieties of mushrooms, to help bring out their flavours.
