Sapodillas are egg-shaped fruit with thin, red to brownish-grey coloured skin. Their flesh is yellow in colour, with a creamy texture. It encases several small seeds and has a honey, caramel-like flavour. Available all year round, serve sapodilla fresh on their own, or add their flesh to salads or cake batters.

Look for sapodillas with smooth skin, with no splits or discoloured patches, They should feel relatively heavy for their size.
To Store
Sapodillas should be quite soft before eating, as unripe fruit is very bitter. Store at room temperature until softened, then store in the fridge for 2 to 3 days.
To Prepare
Cut sapodillas in half and scoop out the flesh. Remove the seeds then drizzle with a little lime or lemon juice to accentuate their flavour.
