Shiitake mushrooms

Shiitake mushrooms have a slightly spongy texture, with a rich ‘meaty’ flavour. Their brown skin contains pale brown gills. Available between November and August, shiitake mushrooms are always cooked before eating. Often used in Asian cooking, they’re great in stir fries, soups and sauces.
