Sin qua are also known as luffa. They are similar to a cucumber in shape, but with 6 to 8 pronounced ridges running along their length. They are pale green in colour, with white flesh that tastes similar to a slightly sweet zucchini. They can be baked, boiled or used in curries.

Store sin qua in the crisper section of your fridge for 5 to 6 days

Peel away the skin then chop or slice as required.
