Snow peas are also known as mange tout. They look like flattened peas, and the whole pea is eaten – both the pod and the immature peas it contains. Snow peas are available all year round, and are sliced and used raw in salads, or cooked whole in stir fries and vegetable dishes. They are crisp in texture, with a slightly sweet flavour.
