3 dried apricot halves
1 dried pear half
4 dried apple rings
3 dried prunes
4 tablespoons apple juice
90 g (3 1/4 oz/1/3 cup) low-fat cottage cheese
2 rice cakes

 

Combine the apricots, pear, apple and prunes in a small saucepan with the apple juice.
Bring to the boil over medium heat. Cook for 5 minutes, or until all the liquid is absorbed. Allow to cool completely.
Arrange the cooled fruit in an airtight container with the cottage cheese. Wrap rice cakes separately to keep fresh.
