BANANA CHOCO CAKE

Ingredients:

  • 200g butter
  • 125g soft brown sugar
  • 1/2 tsp vanilla essence
  • 1/4 tsp chocolate paste
  • 160g ripe bananas, mashed
  • 5 egg yolks
  • 4 egg whites
  • 250g self-raising flour
  • 1/2 tsp bicarbonate of soda sifted
  • 1 tbsp chocolate powder
  • 1/4 tsp salt
  • 20g toasted walnuts, coarsely chopped

Method

  1. Beat egg whites until just stiff, leave aside.  Grease, line and grease a 20 cm cake pan.
  2. Beat butter, sugar and essence until creamy and light.
  3. Add eggs one at a time until well blended.  Stir in chocolate paste and bananas.
  4. Fold in sifted dry ingredients.  Mix in beaten egg white and walnuts.
  5. Spread mixture into prepared pan.  Put a wire stand inside a 8 Qt TIVOLI NEVIO Multi-Purpose Cooker.  Pour in water to one-quarter full.  Place the prepared cake pan on the wire stand.  Steam bake over medium low heat for 50 – 60 minutes.  Halfway through the baking, reduce heat to low and continue to cook the cake until done.
