BANANA CHOCO CAKE

Ingredients:
- 200g butter
- 125g soft brown sugar
- 1/2 tsp vanilla essence
- 1/4 tsp chocolate paste
- 160g ripe bananas, mashed
- 5 egg yolks
- 4 egg whites
- 250g self-raising flour
- 1/2 tsp bicarbonate of soda sifted
- 1 tbsp chocolate powder
- 1/4 tsp salt
- 20g toasted walnuts, coarsely chopped
Method
- Beat egg whites until just stiff, leave aside. Grease, line and grease a 20 cm cake pan.
- Beat butter, sugar and essence until creamy and light.
- Add eggs one at a time until well blended. Stir in chocolate paste and bananas.
- Fold in sifted dry ingredients. Mix in beaten egg white and walnuts.

Spread mixture into prepared pan. Put a wire stand inside a 8 Qt TIVOLI NEVIO Multi-Purpose Cooker. Pour in water to one-quarter full. Place the prepared cake pan on the wire stand. Steam bake over medium low heat for 50 – 60 minutes. Halfway through the baking, reduce heat to low and continue to cook the cake until done.
