CLEAR WATER CITY CAESAR SALAD

Ingredients :
- 2 tablespoon Dijon mustard
- 120gr parmesan cheese, grated
- 8 anchovy, pureed
- 3 large Romaine lettuce
- 6 garlic, pureed
- 300gr croutons
- 4 egg yolk
- 10 slices beef bacon, well cooked
- 90ml wine vinegar
- 2 lemon juice
- 150ml olive oil
- 1 tsp Worcester
- Salt and black pepper
Methods :
- Shake well mustard, garlic, anchovy, lemon to make a paste.
- Add Worcester, egg yolk, mix with whisk, add vinegar.
- Incorporate oil in thin stream while whisking constantly. Add half parmesan and mix again, seasoning with salt & black pepper.
- Tear romaine lettuce and beef bacon, toss salad again, sprinkle with remaining parmesan cheese.
