
Ingredients
- 1kg Chicken breasts, diced into 2 cm square
- 1 lt. Cooking oil
- 1 tsp Baking soda
- 2 tablespoons Cornstarch
- 2 eggs, whites only
- Salt & Pepper to taste
- Coriander leaves, for garnish
- Sliced chili to taste
Method
- Marinate chicken breasts with salt, pepper and baking soda, leave for 5 – 10 minutes
- Mix this chicken breast with egg white and cornstarch, set aside
- Heat oil in a frying pan; fry the chicken breasts while stirring until golden brown. Lift from oil, drain.
- In another skillet heat the plum sauce. Add the fried chicken breast and stir briefly.
- Put in a plate, decorate with coriander leaves and sliced chili
Ingredients for the sauce
- 1 can of Plum Jam or Plum Sauce
- 1 tablespoon ginger, minced
- 1 tbsp Cider vinegar
- 2 Eggs
- 1 tbsp Marmalade jam
- Garlic, minced
- 1 tbsp soy sauce
- 50 ml of water
Method
Combine all ingredients in a sauce pan. Add water and heat, stirring constantly.
