MUSHROOM BENEDICT

Ingredients:
- 10pcs portabella mushroom
- 2 tablespoon white vinegar
- 10 slices chicken ham
- 4 egg yolk
- 10 eggs
- 400gr butter, melted
- 3 tablespoon olive oil
- 1 tablespoon lemon juice
- 3 cloves garlic, finely chopped
- 1 teaspoon salt
- Parsley, chopped
Methods:
- In the bowl on the steam (bain marry), beaten egg yolk and salt until raise and pale. Remove bowl from the steamer, while stirring constantly , add melted butter little each until thickened. Add lemon juice and mix well. Set aside.
- Poach all the eggs. Coat mushroom with olive oil and garlic. Pan fry until soft about 3 minute. Set aside
- Saute chicken ham with olive oil in pan . Set aside
- Flip the mushroom on the plate, put ham and poached egg and pour with sauce over it. Sprinkle chopped parsley over it for the garnish
