RED DATES RAISIN BUTTER CAKE

Ingredients

  • 200g butter
  • 180g castor sugar
  • Rind of 1 orange
  • 4 eggs
  • 2 tbsp milk
  • 255g self-raising flour sifted
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 25g pitted red dates
  • 25g golden raisin

Method

  1. Cream butter, sugar and orange rind until creamy and light.
  2. Beat in eggs, one at a time, adding 1 tbsp of flour if mixture begins to curdle.  Beat in milk until well combined.
  3. Gently fold in flour mixture and add in red dates and raisins to mix.
  4. Turn batter into prepared cake tin.  Level the mixture and smooth the top with a spoon.
  5. Place a wire stand inside a 8 Qt TIVOLI NEVIO Multi-Purpose Cooker.  Pour in water to less than a quarter of the cooker.  Steam bake covered with aluminum foil over medium low heat for 50 – 55 minutes or until cake is well risen.  (Reduce heat to low at half-timing.)
