RICE PILAF with BEEF and MUSHROOM

Ingredients :

  • 45gr Butter
  • 500gr Long grain rice
  • 4 Shallot, chopped
  • 740ml Chicken stock
  • 1 stalk Celery, chopped
  • Salt and white pepper
  • 45gr Fresh basil, chopped
  • 300gr Tenderloin beef, diced cut
  • 5gr Fresh parsley, chopped
  • 150gr Shitake, julienne cut
  • 1 tsp Cayenne

Methods :

  1. Preheat oven 220°C. Heat butter in oven proof pan over medium heat, add shallot, celery, shitake, basil, parsley and cayenne pepper
  2. Place beef into proof pan and cook 3 more minutes
  3. Add rice and mix well, seasoning with salt and pepper. Cook 2 minutes over medium heat until rice starts to stick to bottom pan
  4. Pour chicken stock, stirring constantly and bring it to the boil cover and cook 15 minutes in oven
