RICE PILAF with BEEF and MUSHROOM

Ingredients :
- 45gr Butter
- 500gr Long grain rice
- 4 Shallot, chopped
- 740ml Chicken stock
- 1 stalk Celery, chopped
- Salt and white pepper
- 45gr Fresh basil, chopped
- 300gr Tenderloin beef, diced cut
- 5gr Fresh parsley, chopped
- 150gr Shitake, julienne cut
- 1 tsp Cayenne
Methods :
- Preheat oven 220°C. Heat butter in oven proof pan over medium heat, add shallot, celery, shitake, basil, parsley and cayenne pepper
- Place beef into proof pan and cook 3 more minutes
- Add rice and mix well, seasoning with salt and pepper. Cook 2 minutes over medium heat until rice starts to stick to bottom pan
- Pour chicken stock, stirring constantly and bring it to the boil cover and cook 15 minutes in oven
