Spring Chicken Stuffed Couscous

Ingredients :
- 2 tbsp Butter
- 1 1/3 cups Chicken stock
- 1 pcs Small onion, minced
- ¼ cup Plums / nectarines, diced
- 2 pcs Garlic cloves, minced
- 3 tbsp Dried currants / raisins
- ½ tsp Ground Cinamon
- ¼ cup Pistachio nuts, chopped
- 1/8 tsp Ground Ginger
- 2 tbsp fresh parsley leaves, chopped fine
- 1/8 tsp Turmeric powder
- Salt and ground black pepper
- 1 cup Plain couscous
- 6 pcs Spring Chicken
Method :
- Heat butter over medium heat in a medium saucepan .Add onion, garlic, cinnamon, ginger and turmeric.Cooked for 3 – 4 minutes
- Add couscous, stir until well coated with spices and butter , 1 to 2 minutes.
- Add chicken broth, bring to a simmer, remove from heat, cover and let stand until couscous has absorbed all water, about 5 minutes
- Fluff couscous with a fork and then stir in currants, pistachio nuts and parsley. Season to taste with salt and pepper. Add the plum / nectarines in the last minute
- To reheat stuffing, place in a microwave – safe bowl,cover with plastic wrap and heat in microwave on high power until very hot, 2 to 4 minutes
- Spoon hot stuffing into the cavity of spring chicken.
- Bake in the oven for abbout 20 – 30 minutes or until the chicken are done
