Spring Chicken Stuffed Couscous

Ingredients :

  • 2 tbsp Butter
  • 1 1/3 cups Chicken stock
  • 1 pcs Small onion, minced
  • ¼ cup   Plums / nectarines, diced
  • 2 pcs    Garlic cloves, minced
  • 3 tbsp  Dried currants / raisins
  • ½ tsp    Ground Cinamon
  • ¼ cup   Pistachio nuts, chopped
  • 1/8 tsp    Ground Ginger
  • 2 tbsp fresh parsley leaves, chopped fine
  • 1/8 tsp    Turmeric powder
  • Salt and ground black pepper
  • 1 cup   Plain couscous
  • 6 pcs    Spring Chicken

Method :

  1. Heat butter over medium heat in a medium saucepan .Add onion, garlic, cinnamon, ginger and turmeric.Cooked for 3 – 4 minutes
  2. Add couscous, stir until well coated with spices and butter , 1 to 2 minutes.
  3. Add chicken broth, bring to a simmer, remove from heat, cover and let stand until couscous has absorbed all water, about 5 minutes
  4. Fluff  couscous with a fork and then stir in currants, pistachio nuts and parsley. Season to taste with salt and pepper. Add the plum / nectarines in the last minute
  5. To reheat stuffing, place in a microwave – safe bowl,cover with plastic wrap and heat in microwave on high power until very hot, 2 to 4 minutes
  6. Spoon hot stuffing into the cavity of spring chicken.
  7. Bake in the oven for abbout 20 – 30 minutes or until the chicken are done
