Fried Potato Sambal
Ingredients :
- 500 grams potato,diced
- 740 ml water
- 2 tsp salt
- 2 stalks lemongrass
- 2 kefir lime leaves
- 2 cm galangal
- 1 bay leaf
- 4 tbsp coconut milk
- 2 tbsp sweet soy sauce
Herbs and seasonings :
- 5 shallots
- 3 garlic
- 3 large red chili peppers
- 5 cayenne chili peppers
- 1 cm galangal
- 1 cm ginger
Instructions :
- Soak diced potato for 15 minutes in water with a pinch of salt.
- In a pan, heat vegetable oil and fry the soaked diced potatoes until golden brown. Drain the excess vegetable oil and set aside.
- Ground the herbs and seasonings with a blender or mortar and pestle until they form a paste-like texture.
- Stir fry the ground herbs and seasoning, then add in lemongrass, kefir lime leaves, galangal, and bay leaf until fragrant.
- Stir in sweet soy sauce, coconut milk, and salt. Add the fried potatoes into the sauce and stir.
- The fried potato sambal is ready to serve!
- Add boiled quail eggs, shrimp, chicken liver, chicken gizzards, or bitter beans into your fried potato sambal for a more flavorful dish!
