Lodeh Salmon
LODEH SALMON
INGREDIENTS:
- 2 tablespoon oil
- 1 Indonesian bay leaf
- 400 ml coconut milk
- 800 ml water
- 2 teaspoon salt, or to taste
- 1 1/2 tablespoon palm sugar
- 10 long bean, cut into 2-inch pieces
- 250 gram salmon fillet
- 1 tomato, quartered
SPICE PASTE (grind the following together)
- 6-8 shallots
- 4 cloves garlic
- 2 teaspoon shrimp paste (terasi)
- 1/2 inch galangal
- 1/2 inch ginger
- 3 candlenuts
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 5 red chili
INSTRUCTIONS:
- Heat oil in a soup pot/wok over a medium-high heat. Fry the spice paste until fragrant. This should take about 5 minutes.
- Add daun salam (if using) and thinly sliced chilies (if not included in the spice paste). Stir for another minute.
- Add coconut milk, water/chicken stock, season with salt and palm sugar. Bring to a boil.
- Add salmon, long beans, eggplants, soybean tempeh, and tomato. Once it boils again, reduce heat to a simmer and cook until the vegetables are fully cooked and tender. Adjust the amount of salt/palm sugar as needed.
- Turn off the heat, transfer to a serving bowl, and serve immediately with steamed white rice.
LODEH SALMON
BAHAN-BAHAN:
- 2 sendok makan minyak
- 1 daun salam Indonesia
- 400 ml santan
- 800 ml air
- 2 sendok teh garam, atau secukupnya
- 1 1/2 sendok makan gula aren
- 10 kacang panjang, potong 2 inci
- 250 gram fillet salmon
- 1 tomat, dipotong-potong
BUMBU YANG DIHALUSKAN:
- 6-8 bawang merah
- 4 siung bawang putih
- 2 sendok teh terasi (terasi)
- 1/2 inci lengkuas
- 1/2 inci jahe
- 3 kemiri
- 1 sendok teh ketumbar bubuk
- 1 sendok teh bubuk kunyit
- 5 cabai merah
PETUNJUK:
- Panaskan minyak dalam panci sup/wajan dengan api sedang-tinggi. Tumis bumbu halus hingga harum. Ini akan memakan waktu sekitar 5 menit.
- Tambahkan daun salam (jika menggunakan) dan cabai yang diiris tipis (jika tidak termasuk dalam pasta bumbu). Aduk sebentar.
- Masukkan santan, air/kaldu ayam, bumbui dengan garam dan gula aren. Didihkan.
- Masukkan ikan salmon, kacang panjang, terong, tempe kedelai, dan tomat. Setelah mendidih lagi, kecilkan api hingga mendidih dan masak sampai sayuran matang dan empuk. Sesuaikan jumlah garam/gula aren sesuai kebutuhan.
- Matikan api, pindahkan ke mangkuk saji, dan sajikan segera dengan nasi putih kukus.
